I love Ginger Nuts

Recently I stated on Facebook that I love Ginger Nuts. I won't even begin to mention the rude and entirely inappropriate response I got from this - mainly from red heads. Anyway, I was actually referring to Ginger Nut BISCUITS - and here's my favourite recipe.


Ginger Nut Biscuits (from 'The Essential Baking Cookbook' by Bay Books)

2 cups plain flour
1/2 tsp bi-carb soda
1 tbs ground ginger
1/2 tsp mixed spice
125g unsalted butter
1 cup soft brown sugar
1/4 cup boiling water
1 tbs golden syrup

1. Preheat oven to 180 degrees celsius and line tins with baking paper
2. Sift the flour, bicarb, ginger and mixed spice into a large bowl. Add the butter and sugar and rub into the flour with your fingertips until the mixture resembles fine breadcrumbs
It should look something like this...
3. Pour the boiling water into a small jug, add the golden syrup and stir until dissolved. Add to the flour and mix to a soft dough with a flat-bladed knife
4. Roll into balls, place on the trays (leave room for spread) and flatten slightly with fingertips
This size or smaller if you're not as big a pig as me
5. Bake for 15 minutes, or until well-coloured and firm. Cool on tray for 10 minutes before transferring to a wire rack.
6. Once cooled, you can ice with lemon icing if you like - I prefer plain but if you're fancy schmancy, feel free to ice.
Mmmm...
So there you have it. If you're a spice person you could always add more of the ginger and mixed spice, but they're good as they are. Enjoy!
